the reason we don't allow stopping permanently is that WinGate relies on being able to send notification emails about problems/issues.
However I don't know why this should be causing problems for your other mail server. If you're not running WinGAte SMTP Server (to receive mails), nor POP3 Collection, then the only mails that the SMTP delivery service should be trying to send are internally-generated ones. And this should only happen if there is some issue.
Normally therefore it would only be delivering to the admin email address anyway. You could try setting the delivery settings to deliver to your other mail server?
Otherwise if there is a lot of mail, that indicates some other problem that needs looking at.
