Hi there. Do you need to redirect them to another IP or just show a block page?
If the latter and you only have a requirement for one block page, then you can edit the default block page in Web Access Control -> Settings. Then create a Web Access Rule to send back that page if users visit youtube.com.
If you really need to redirect, then use Policy. Set up a policy that attaches to the HTTPProxy::Request event and matches on the Request.Server field for "youtube.com" and "*.youtube.com"
I have attached a sample policy you can import to get you started.
