If possible I need an example how to config Wingate 5.2.3(B901) to accept dialup server clients. without triggering the firewall and protect the server from public interface attacks.

I think the best way to do this would be with the VPN, then you get a secure connection that can be accessed no matter what IP address the remote client has. There really is no way to allow a trusted connection from the internet when the client has a dynamically assigned IP address.
