Normally no configuration is required in WinGate for clients to access external mail servers through WinGate. They sinply connect directly to the servers through WinGate's NAT. This means that the client computers are configured to connect directly to the POP3 server on the Internet.
Did you install the ENS?
Also did you upgrade from a previous version (i.e. 4.x) to 5.2.3 or are you running WinGate 6.0 beta?
