If you want the proxies to have individual configuration you will need to create them individually.
You can probably make life a bit easier using the registry. For example you could export the registry for an existing proxy, and copy it. All you need to do is give it some unique values for:
* name of the registry key (this is the name of the service)
* UUID value
* PortNumber
And then import that registry. You could put all 100 proxies in that 1 registry file. You would stop WinGate first, import the registry, and then start WinGate. If you take a backup of the registry first you can roll back if it doesn't work and adjust.
Other things you want to override such as specific binding rules. If the default binding rules are ok, life will be a lot easier.
