is this for NAT traffic (from client computers) or from the WinGate computer itself?
You can do several things
a) ENS Policy. You can use this to specify who can connect to which IP:port
b) Intercept connections to a TCP mapping proxy. In this case, leave default mapping and all mappings empty. Then the proxy will connect to wherever the connection was going before it was intercepted, plus give you the ability to set gateway and policy.
